В настройках кеша, кеширование выключено и включить его не возможно(кнопки не активны), но судя по логам сервера кеш создаётся при помощи Redis. Как поменять?

    так тебе его включить или отключить нужно то? 

    Если redis и тд не выбираются, значит они не установлены на самом сервере хостинга
